You HAVE to try the recipe! It is my best one yet! Believe it or not, spinach and sun-dried tomatoes pair really well!
Serves: 8-10
Prep Time: 15 mins.
Cook Time: 30 mins.
5 eggs
1 1/2 cups heavy cream
1/2 cup sun-dried tomatoes (diced)
2.5 oz. (or 1/2 of a 5 oz. container) fresh spinach
1 1/2 cups shredded cheddar
2 Tbs. flour
2 tsp. minced garlic
1/4 tsp. salt
1/8 ground pepper
Preheat the oven to 375 degrees. In a large saucepan, heat 2-3 tablespoons of olive oil. Add the spinach, then cover with a lid. Once the spinach has shrunk, fold in the minced garlic, then cook for a few more minutes. Place the spinach in a fine mesh sieve (or colander). With a spatula, press it firmly until most of the water is gone. Chop, then set aside.
In a large bowl, whisk together the eggs, heavy cream, flour, salt, and pepper. Stir in the shredded cheddar, diced sun-dried tomatoes, and spinach. Pour the mixture into a 9 x 9” square pan. Bake for 30 minutes, or until the center is firm and the edges are golden brown. Serve and enjoy!
